File format information for each Document

Each document needs a place which could store the captured format information for each file.

This could either be stored in the filesystem, perhaps as an extension of the hash functions.

Or it could be stored in the database.

Probity is currently hooked tightly into the core methods in Document (->rehash). This is probably better implemented as a callback, in which case additional document metadata (stored on disk) could be generated by a ArchiveConfig? callback.
